Spinach and Mushroom Buckwheat Crepes

Warning. I’m about to go full on food snob. We got this cheese. From France. And oh my goodness, it works so well in this recipe. I was making some serious yummy noises when I was eating these and I couldn’t wait to share the recipe so others could enjoy it too.

“Hang on,” said Lawrence, breaking my reverie. “You can’t post the recipe if you don’t know what cheese it is.”

Ah. He’s right. I haven’t got a clue what kind of cheese made this dish so damn good. It didn’t come with a label, just a round wheel wrapped in paper with a grey covering of mould around the outside. It’s not a hard cheese, or a soft cheese, but somewhere in between the two with a poignant flavour and excellent melting properties. It could be described as the lovechild between brie, mature cheddar and edam (don’t ask me how that would work).

Anyways, I thought this could be turned into an opportunity. Use a local cheese. Something that intrigues you, that you’ve sampled at a market and you couldn’t resist bringing a wheel home. Use whatever cheese you like. You can hardly go wrong combining it with mushrooms, spinach and Greek yogurt, then wrapping it in a buckwheat crepe. Don’t forget to season; it can make or break the recipe.


Spinach and Mushroom Buckwheat Crepes

Makes 3

Gently saute a batch of mushrooms with a peeled and chopped clove of garlic. Add fresh or frozen spinach when the mushrooms are mostly cooked and leave on a low heat to wilt.

Place 100g buckwheat flour in a bowl, then add an egg and 250ml milk of your choice. Whisk together.

Make three large crepes, keeping the cooked ones warm in a moderate oven.

When the pancakes are ready, increase the heat slightly on the mushroom mix and stir through cheese and a few heaped tablespoons of Greek yogurt, just enough to loosen up the mixture into a thick sauce. SEASON.

To serve, add a dollop of the mix to the centre of the pancakes, spread all over, then roll. Enjoy the first bite, it’s a good one.
